Jolie is probably the least self-serving celebrity out there, give her a break and get the facts straight.
It's not like she's defending censorship or anything like that. She only did what most (real) celebrities want to do, and what most of us would do in this type of situation: with little time available to only talk about a professional matter, she drew a clear line.
Let's be honest here, and I'm not a fan or a hater: many journalists in this field (and especially papparazzi) are completely clueless about when to talk business and when to talk personal life. I doubt she would have a fit if even the most controversial movie-related question was asked. Just don't talk about Brad and the kids, it's not anybody's business at this moment (according to her actions).

Umm, freedom of the press does not mean that anyone has let to interview/talk to them. It means they can report that they want allowed there (or whine, which is more similar) -- but she's not suppressing press by saying SHE refuses to talk about her own personal life.
